Orange Ginger Marinated Salmon Skewers

Orange Ginger Marinated Salmon Skewers with Aromatic Slaw and Thai Lime Dressing

(Serves 4 as an appetizer)
 4 wood skewers, soaked in water for 1 hour
 12 ounces salmon, cut into 1” chunks
 Orange Ginger Marinade, recipe to follow
 Korean BBQ Sauce, recipe follows
 Aromatic Slaw with Thai Lime Dressing, recipe follows
Orange Ginger Marinade
 ½ cup canola oil
 1 teaspoon orange zest
 1 teaspoon ginger, peel, rough chop
 1 garlic clove, chopped
 1 teaspoon sambal
 1 tablespoon soy sauce
 4 teaspoons aji mirin
Korean BBQ Sauce
 1/2 cup Korean Chili paste
 11/2 tablespoons aji mirin
 1 tablespoon sesame oil
 1 ½ tablespoons soy sauce
 2 cloves garlic, chopped
 2 teaspoons ginger, finely chopped
 ½ cup orange soda
 1/3 cup Sweet Thai Chili Sauce
Aromatic Slaw with Thai Lime Dressing
 1 bunch cilantro, rough chop
 1 bunch mint, picked leaves
 1 package daikon sprouts
 3 green onion stalks, biased cut, thin
 1 carrot, peeled and julienned
 ½ red onion, thinly shaved
Thai Lime Dressing
 Juice of 2 limes
 3 tablespoons fish sauce
 3 tablespoons brown sugar
 2 teaspoons Sriracha

Orange Ginger Marinade

In a small bowl combine all ingredients and mix well. Place salmon in a shallow pan, pour marinade over salmon and marinade at least 30 minutes. Remove salmon from marinade and cut fish into 1” chunks and then skewer.

Korean BBQ Sauce

In a small saucepan over low heat combine Korean Chili Paste, aji mirin, sesame oil, soy sauce, garlic, ginger and orange soda. Bring to low simmer and cook ten minutes. Add Sweet Thai Chili Sauce and stir to combine. Set aside. Heat BBQ to 350 degrees. Spray grill with cooking spray and place skewers on grill. Grill 2-3 minutes, turn and grill 2 more minutes. Remove from grill and lightly baste with Korean BBQ Sauce. To serve place one skewer on serving plate with a generous scoop of Aromatic Slaw on the side.

In a mixing bowl combine all ingredients and toss to combine.

Thai Lime Dressing

In a small bowl or jar combine all ingredients and mix well. Toss about 2 tablespoons of dressing over aromatic slaw and combine.
