Grilled Halibut with Dungeness Crab

Grilled Halibut with Dungeness Crab, Avocado and Feta Salad, Chipotle Rice Pilaf, Aleppo Chili Oil

Serves 4
 4 ea. 6 ounce pieces halibut
 Dungeness crab, Avocado and Feta Salad, recipe follows
 Chipotle Rice Pilaf, recipe follows
 Aleppo chili oil, recipe follows, garnish
Dungeness Crab, Avocado and Feta Salad
 1lb. Dungeness crab meat
 2 avocados, peeled and diced
 1 cup feta, crumbled
 1/4 cup olive oil
 Juice of one lime
 2 teaspoons cumin, toasted
 1/2 bunch cilantro, chopped
 Salt to taste
Chipotle Rice Pilaf
 2 cups Calrose rice, prepared according to package instruction
 2 chipotle peppers, seeded and finely chopped
 2 cloves garlic, fried
 2 shallots, peeled, cut in half, roasted, chopped
 1/2 bunch cilantro, chopped
 1 tablespoon olive oil
Aleppo Chili Oil
 1 teaspoon Aleppo chili flake
 1/4 cup olive oil
 1/4 cup canola oil
Dungeness Crab, avocado and feta salad Directions

In a medium bowl combine crab meat, avocado and feta and toss gently to combine. In a small bowl combine olive oil, lime juice, cumin and cilantro and stir to combine. Slowly add dressing to crab mixture and combine.

Chipotle Rice Pilaf Directions

In a medium bowl combine prepared rice, chipotle pepper, fried garlic cloves, roasted shallots, cilantro and olive oil. Toss to combine. Keep warm.

Aleppo Chili Oil

In a small sauce pan over low heat combine all ingredients and heat 5 minutes. Remove from heat and let sit one hour. Strain and set aside until needed. Mix well right before using. To serve place halibut on center of plate. Next, place a generous scoop of crab salad next to halibut. Add a scoop of Chipotle Rice Pilaf and lightly drizzle plate with Aleppo Chili Oil.
