Crab Linguine with san marzano tomato, calabrian chile, roasted garlic, pancetta, basil, romano toscano
In a large sauté pan over medium heat add olive oil and pancetta and sauté 3-4 minutes or until pancetta is getting crispy. Add shallot, garlic and butter. Cook one minute. Add Calabrian chilies and cook 1 minute. Add San Marzano tomatoes and peeled roasted garlic. Reduce heat and simmer 10 minutes. Season with salt and pepper. Add crab meat, basil and cooked linguine and toss to combine. Serve on plate or in pasta bowl and grate Romano cheese over top.
