SINGING SCALLOPS with Champagne Butter Sauce

Serves 4

Ingredients:
2 lbs. Live scallops
1 oz. Canola Oil
1 tbls. Minced shallots
½ tbls. Minced garlic
4 oz. Champagne
2 oz. Heavy cream
4 oz. Whole butter, diced into cubes
½ cup Diced tomatoes
2 tbls. Minced chives
TT Salt and pepper

Method:

  1. Heat oil in sauté pan adding shallots and garlic. Cook until soft.
  2. Add scallops and champagne, cover and steam until opened. Remove from pan.
  3. Add heavy cream and reduce by ½. Slowly add butter on low heat and mix until incorporated.
  4. Finish with tomatoes, chive and season to taste. Pour over scallops
