CEDAR ROASTED SALMON
With Warm Bacon Vinaigrette and Wilted Spinach Salad

Recipe Yield: 4 portions

Salmon:
4 ea. 7 oz. salmon portions, brined, smoked if possible
1 Tbls. Salty’s seasoning spice

Method:

  1. Soak the cedar planks over night before using to avoid catching on fire.
  2. Season salmon and place on plank. Roast in oven at 400 degrees for 6 minutes and turn. Roast an additional 4 minutes or until 130 degrees internal temperature.

Vinaigrette:
8 oz. Bacon, sliced and julienned
½ oz. Garlic, minced
½ oz. Shallot, minced
2 oz. Apple Cider vinegar
1 Tbls. Brown Sugar
TT Salt and pepper

Method:

  1. Render bacon in sauté pan until crispy. Add garlic and shallots and sweat until translucent. Deglaze with vinegar.
  2. Add sugar and season to taste. Toss with 1 lb of fresh spinach to wilt.
