Broiled Monk Fish with Sage

Recipe Yield: 4 portions

Monkfish:
4 ea. 6 oz. Monkfish Filet
2 oz. Canola Oil
1 tbls. Salty’s Seasoning
4 oz. Sliced Pancetta
½ C Sage leaves, whole, fresh

Method:

  1. Season Monkfish filets with seasoning blend.
  2. Place Sage leaves on top of fish and wrap with pancetta.
  3. Place in sauté pan with oil and broil in oven on high heat for 12 minutes. Rotate the wrapped fish every 3 minutes so that the pancetta doesn’t burn.
