Broiled Monk Fish with Sage
Recipe Yield: 4 portions
Monkfish:
4 ea. 6 oz. Monkfish Filet
2 oz. Canola Oil
1 tbls. Salty’s Seasoning
4 oz. Sliced Pancetta
½ C Sage leaves, whole, fresh
Method:
- Season Monkfish filets with seasoning blend.
- Place Sage leaves on top of fish and wrap with pancetta.
- Place in sauté pan with oil and broil in oven on high heat for 12
minutes. Rotate the wrapped fish every 3 minutes so that the pancetta doesn’t
burn.
