Black Bean Roasted Dungeness Crab

Recipe Yield: 8 portions

Black Bean Sauce:
½ cup Miso Paste
1/3 cup Sake
½ cup Aji Mirin
¼ cup Sugar
3 Tbls. Sambal Oelek
4 oz. Fermented Black bean, rinsed well

Method:

  1. Combine all ingredients and hold for service.

Black Bean Crab:
8 ea. Dungeness crab, live
4 oz. Peanut oil
2 Tbls. Kosher Salt
1 Tbls. Black Pepper
4 Tbls. Ginger, fresh, grated
4 Tbls. Garlic, minced
1 batch Black bean sauce
4 oz. Green onions, bias cut
2 oz. Green onions, whites only, fine julienne

Method:

  1. Clean crab by taking the cap off and removing the gills. Leave viscera in cap if desired.
  2. Break apart crab legs into individual pieces and crack with back of chef’s knife.
  3. Heat oil in large wok or sauté pan until smoking. Add crab legs and caps and toss to coat with oil.
  4. Season with salt and pepper, continuing to cook for 1 minute, stirring well.
  5. Add ginger and garlic, sauté lightly for 30 seconds and place in 400 degree oven and roast until 140 degrees internal temperature.
  6. Remove from oven, add sauce and bias cut green onions. Toss until well coated.
  7. Place cap on serving plate and stack legs inside the cap. Garnish with julienned green onions.
