Grilled Sockeye Salmon with Apple Horseradish Slaw

Serves 2

GRILLED SOCKEYE

2 6-oz Pieces Sockeye Salmon
1 Tbsp Canola Oil
Pinch Salty’s Seasoning Salt
˝ c Apple Horseradish Slaw (recipe follows)

Heat medium-size fry pan to medium-high heat. Add oil and sear sockeye 5 minutes on 1 side. Flip and sear additional 3 minutes. Remove from heat and let rest. Top with a nest of Apple Horseradish Slaw and enjoy!

APPLE HORSERADISH SLAW

1 Apple, julienned
˝ Lemon, juiced
1 Tbsp Canola Oil
Pinch Salt
Pinch White Pepper
1/4 c Pickled Horseradish (recipe follows)

Mix all ingredients together right before serving.

PICKLED HORSERADISH

˝ c Rice Wine Vinegar
˝ c Water
˝ Tbsp Salt
˝ c Sugar
1 c Fresh Horseradish, shredded

Bring vinegar, sugar, water and salt to boil in a sauce pan. Pour over horseradish and cover for 20 minutes. Chill until ready to use.
