Serves 6 plus
1/2 pound butter
1 cup self-rising flour
1 cup pitted dates, coarsely chopped
1 1/4 cup brown sugar
1 large egg
Glaze:
4 ounces butter
1/4 cup brown sugar
1/3 cup water
pinch salt
Garnish:
Whipped cream flavored with bourbon or serve with ice cream
Place dates in a small saucepan and cover with water. Simmer for 5 minutes and then let stand for 5 minutes. Drain and cool.
Cream 1 cup brown sugar and butter together. Add egg, dates and flour. Mix together until blended. Pour into 8-inch round cake pan that has been greased with butter and floured. Bake at 350 degrees for 15 to 20 minutes or until done.
Prepare glaze by stirring together butter, brown sugar, water and salt in a small saucepan with a lid. Bring to a boil and cook on medium low heat until sauce coats the back of the spoon, approximately 5 to 8 minutes.
With cake still in its pan and warm, poke holes into the cake with the handle of a wooden spoon. Pour half of the sauce over the cake and let rest for 30 minute to absorb flavors. Invert cake onto serving plate and pour the remaining sauce over the cake. Serve with whipped cream or ice cream.
Jane’s Hint: Serve it with roasted peaches and whipped cream flavored with bourbon. Now that comes from being a southern gal!
